Ingredients
  

  • 1 cup strawberries quartered
  • 1/2 cup super fine sugar
  • 2 tablespoons water
  • 1 tablespoon bourbon
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions
 

  • Prep: Wash and quarter 1 cup strawberries.
  • Combine Ingredients: In a saucepan, combine the quartered strawberries, 1/2 cup super fine sugar 2 tablespoons water, 1 tablespoon bourbon and 2 teaspoons pure vanilla extract. Stir the mixture well to ensure all the ingredients are evenly distributed.
  • Cook: Place the saucepan over medium heat and bring the mixture to a boil. Once it is boiling, reduce the heat and let it simmer for about 20 minutes. During this time, the strawberries will break down, and the mixture will start to thicken, forming a jam with chunks of strawberries in a syrupy base. Stir occasionally to prevent sticking and to ensure even cooking.
  • Add Lemon Juice: After 20 minutes of simmering, remove the saucepan from the heat. Stir in 1 tablespoon fresh lemon juice, this will enhance the flavor and help to preserve the jam.
  • Cool and Refrigerate: Allow the jam to cool slightly before transferring it to a clean jar or container. Refrigerate the jam for at least an hour, or until it has thickened and is cold. The refrigeration process will help the jam set properly.
