
Magic Bars Recipe with Pistachios and Chocolate
Magic bars are some of the easiest desserts you can make. They use a quick prep-process with your choice of flavors and a simple layering technique. In this case, we're taking the flavors up a notch with pistachios and semi-sweet chocolate. These two ingredients, added to a buttery pistachio crust, shredded coconut, and sweetened condensed milk create a DELICIOUS magic cookie bar. They're so quick to prep but also great to make ahead of time!
Equipment
- Food processor
- medium mixing bowl
- Handheld electric mixer or stand mixer
- 9×9-inch baking pan
- Parchment paper
Ingredients
Buttery Pistachio Crust:
- 1 cup almond flour
- 1 cup salted and roasted pistachios shelled
- 1/3 cup butter melted
- 1 tsp pure vanilla extract
Pistachio-Chocolate Magic Bars Filling:
- 2 cups semisweet chocolate
- 1 cup sweetened shredded coconut
- 1 cup salted and roasted pistachios shelled
- 1 14 oz can sweetened condensed milk slightly warm
Instructions
- Prep and Preheat: Line a 9×9 greased baking pan with parchment paper, this makes life easier when it's time to slice and serve. Preheat oven to 350F (170 C).
Pistachio Crust:
- Pistachio crumbs: Add 1 cup salted and roasted pistachios (shelled) to a food processor. Pulse several times until the pistachios start forming crumbs. Mix briefly on high to expedite the process, then switch back to several more pulses until all pistachios have been chopped into small coarse crumbs. Be careful to not over-process these or they may start turning into a pistachio butter.
- Combine Crust: In a separate bowl, whisk the pistachio crumbs with 1 cup almond flour, 1/3 cup butter (melted), and 1 tsp pure vanilla extractuntil fully combined. You can use an electric mixer to expedite this process. Press the crust into the bottom of the lined 9×9 pan in an even layer to form the crust.
Pistachio-Chocolate Magic Bars Filling:
- Layer: Add a layer of each of the following on top of the prepared crust: 2 cups semisweet chocolate, 1 cup sweetened shredded coconut and 1 cup salted and roasted pistachios. Pour the slightly warmed sweetened condensed milk over the top, making sure to distribute it as evenly as possible.
- Bake: Place bars in the oven and bake at 350℉ for about 25 minutes. The edges will start to brown and you will see the condensed milk start to settle on top.
- Cool and serve: Remove from the oven and let the bars cool completely before slicing into squares. They’re even better the next day as they continue to set. Enjoy!
