Mini Cinnamon Pies with Puff Pastry Recipe
Mini cinnamon pies with buttery puff pastry and a brown sugar cinnamon filling. Made with only six ingredients and baked within 10-minutes, it’s an incredibly easy recipe for when you need something sweet and cinnamony ASAP

Ingredients
Cinnamon Filling
- 2 tablespoons softened butter
- ¼ cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
Pastry
- 1 package (2 sheets puff pastry, thawed)
- 1 egg beaten
Optional
- Turbinado Sugar
- Powdered sugar for dusting
Instructions
- Prep: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Filling: In a mixing bowl, combine 2 tablespoons softened butter, ¼ cup packed brown sugar, 1 teaspoon ground cinnamon and 1 teaspoon pure vanilla extract. Stir until well blended, creating a smooth and even filling. Set aside.
- Prepare the Pastry: Lightly flour your work surface, and roll out each sheet of puff pastry until it's smooth. Using a 3-inch cookie cutter or a glass, cut out 9 circles from each pastry sheet, giving you 18 circles in total.
- Add the Filling: Place half of the circles on a parchment-lined baking sheet—these will serve as the bottom layer. Spoon about ½ tablespoon of the cinnamon filling into the center of each bottom piece, leaving about a ½-inch border around the edges.
- Add the top: Add the egg to a small bowl and beat until smooth to make your egg wash. Using a pastry brush, lightly brush the beaten egg along the border of each bottom piece. Place a second pastry circle on top of each filled piece, use a fork to press the edges together and seal.Brush the tops of each mini pie with the remaining egg wash to give them a golden finish during baking. Add a sprinkle Turbinado Sugar to each mini pie after the egg wash has been added.
- Bake: Bake the pies at 400°F (200°C) for about 10 minutes, or until they are golden brown and puffed. Check on them around the 8-minute mark to ensure they don’t over-bake or ooze filling.
- Cool and Serve: Once baked, remove the pies from the oven and let them cool for a few minutes on the baking sheet. Dust with Powdered sugar if desired, then serve and enjoy!
Notes
These little cinnamon puff pastry pies are best enjoyed fresh but can be stored in an airtight container at room temperature for a day or two. Perfect for a quick dessert or a cozy snack!
