Equipment

  • 8×8-inch baking pan
  • large mixing bowl
  • Medium heatproof bowl
  • Measuring cups & Spoons
  • Silicon Spatula

Ingredients

  • 4 cups rice Chex cereal or similar
  • 2 cups semi-sweet chocolate chips
  • 1 cup peanut butter
  • 1/2 cup butter
  • 2 tablespoons powdered sugar or as needed to top

Instructions

  • Prep: Line with parchment paper and grease an 8×8-inch square pan (9×9-inch pan works, too). Measure 4 cups rice Chex cereal, into a a large bowl and set aside.
  • Melt: In a heat-proof bowl, melt 2 cups semi-sweet chocolate chips, 1 cup peanut butter, and 1/2 cup butter. You can melt this in the microwave, stirring every 30 seconds until smooth, or use a double boiler for more control. I prefer using a double boiler set up for this step because I can see everything melting and pull the bowl off the heat before anything burns. Be careful, as it will be very hot once fully melted.
  • Mix with the Chex: Pour the melted chocolate-peanut butter mixture over the cereal in the large bowl. Mix until all the Chex are completely coated with chocolate.
  • Chill: Transfer the mixture to the prepared pan and gently spread into an even layer. Place the pan in the freezer for 30-45 minutes, or until the bars are firm and fully chilled.
  • Add the powdered sugar: Sprinkle about 2 tablespoons powdered sugar on the cold muddy buddy bars. Cut and enjoy!!! This is such a treat!

Notes

These muddy buddy bars are best served cold. As with other chocolate treats, these bars may melt if kept in a warm setting or held for long. Store in an airtight container in the fridge.

  1. Looks delicious Can it be made with sunbutter instead of peanut butter? And would any cereal typically work?

    1. Hi Alison! Though I haven’t tested it, I think these bars could work with sun butter. What to watch for is if the sun butter you’re using is more oily than traditional peanut butter, in which case you may need to reduce the amount of butter so the bars can hold together and aren’t too oily. It would require some testing but may be worth the effort! As for other cereals, I think this would be just as good with Rice Krispies or a similar cereal.

I’d love to hear if you try it!

Muddy Buddy Bars – where have you been all of my life??? These are so easy to make and much easier to serve to guests or in my case, even to a construction crew of men! They raved over the wonderful meld of peanut butter and chocolate. Needless to say, no leftovers. Only requests for another pan. I encourage you all to try them. These are going inside the family cookbook as I know they will be a mainstay at our house! Thanks, Dee, for sharing!
