Ingredients
  

For the Bars

  • 2 cups oats
  • 1 ½ cups peanut butter (crunchy or smooth)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract (optional)

For the Icing (optional)

  • 1 teaspoon milk or water
  • ¼ cup powdered sugar

Instructions
 

  • Combine: In a mixing bowl, combine 2 cups oats, 1 ½ cups peanut butter, 2 tablespoons honey, and 1 teaspoon vanilla extract (if using). Stir until the mixture is well combined and forms a sticky dough.
  • Shape and Chill: Line an 8-inch square pan with parchment paper (or grease lightly). Transfer the mixture to the pan, pressing it down firmly into an even layer with a spatula or your hands. Chill in the fridge for at least 15-30 minutes or until firm. For faster results, pop it in the freezer.
  • Optional Icing: Add ¼ cup powdered sugar and 1 teaspoon milk (or water) to a small bowl, using a fork, whisk together until smooth. Use the fork to drizzle lines of icing over the chilled bars. Let the icing set before cutting.
  • Slice and Serve: Once chilled, slice into 9 bars and enjoy! Store any leftovers in the fridge for up to a week.
