
Nutella Cookie Pie Bars Recipe
Ooey gooey Nutella Cookie Pie Bars AKA the Nutella lover’s dream. They're absolutely delicious, packed with flavor, and has a perfectly moist texture. Baked with pantry and fridge-friendly ingredients like semisweet chocolate chips, butter, sugar, flour, oil, and a boatload of Nutella. I warn you, it’s deliciously addictive.

- Parchment paper

Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup softened butter
- 1/2 cup unrefined coconut oil
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 large room temperature eggs
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon espresso powder optional
- 1 1/2 cups semisweet chocolate chips
- 1 1/3 cup Nutella
Instructions
- Prep: Line an 8×8 inch square baking pan with parchment paper and grease it well with butter or coconut oil. Preheat your oven to 325°F (165°C).
- Mix Dry Ingredients: In a small bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/4 teaspoon salt until well combined, this helps ensure even distribution of leavening agents and prevents clumps. Set aside.
- Cream Together: In a separate large mixing bowl, beat 1/2 cup softened butter, 1/2 cup unrefined coconut oil, 3/4 cup brown sugar and 1/2 cup white sugar until creamy. Add in 2 large room temperature eggs, 1 1/2 teaspoons pure vanilla extract and 1/4 teaspoon espresso powder (optional) mix until just combined. Do not over mix.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until a cookie dough forms. Fold in 1 1/2 cups semisweet chocolate chips until evenly distributed.
- Assemble & Bake: Divide the cookie dough in half. Press the first half evenly into the bottom of the prepared baking pan. Spread the 1 1/3 cup Nutella in an even layer on top of the cookie dough in the pan. Flatten small pieces of the remaining cookie dough in your hands and place them over the Nutella layer, be careful to not press the cookie dough in to the Nutella. Continue until the top is fully covered and you’ve used all the remaining dough.
- Bake: Place the pan in the oven and bake at 325°F for 45 minutes, or until the edges are golden brown and the top no longer looks raw.
- Cool and Slice: Let the bars cool in the pan for about an hour to set before slicing. Serve and enjoy!
