These Peppermint Chocolate Crunch Bars are the perfect treat for a family get together or afternoon snack! They are the perfect mix of chocolate and peppermint with just the right amount of crunch. They are super quick and easy to make, with just 4 simple ingredients.

Equipment

  • 8×8 or 9×9 baking pan
  • Heat proof bowl
  • medium mixing bowl
  • Parchment paper

Ingredients
  

  • 3 ½ cups Rice Krispies cereal or rice Chex cereal
  • 3 cups milk chocolate chips
  • 1 cup butter
  • 1 1/2 teaspoon peppermint extract
  • Powdered sugar and crushed peppermint for decoration optional

Instructions
 

  • Prep: Lightly grease your baking pan with butter and line with parchment paper. Measure 3 ½ cups Rice Krispies cereal or rice Chex cereal into a medium bowl and set aside.
  • Melt: In a separate heat-proof bowl, add 3 cups milk chocolate chips, 1 cup butter, and 1 1/2 teaspoon peppermint extract and melt together. You can either use a double boiler for a smooth and easy melting process or opt for the microwave method for convenience. If using the microwave, start with 1 minute and then 30 second increments, stirring between each set until fully melted. Whichever method you choose, ensure that the mixture is completely melted and smooth.
  • Coat the cereal: Pour the melted chocolate mixture over the cereal in the medium bowl. Gently mix until all the cereal is fully coated, ensuring every piece is evenly covered.
  • Press into Pan: Pour the chocolate coated cereal into your prepared pan. Using the back of a silicon spatula gently spread and press down into an even layer.
  • Garnish and Enjoy: Top with Powdered sugar and crushed peppermint for decoration if you’d like. Place in the fridge to chill for a few minutes until set. Cut into bars and serve.

Notes

I made these bars with milk chocolate, but you can easily substitute with semisweet chocolate chips or dark chocolate chips.
I like to use Rice Chex, but you can use Rice Krispies, or a similar cereal
