
Strawberries in Red Wine Syrup Recipe (Pinot Noir)
This Pinot Noir Strawberry Syrup is bursting with flavor, easy to make, and pairs beautifully with fresh berries and whipped cream, on top of cake, or with my personal favorite – pavlova! The flavors of the Pinot Noir red wine are so perfect when cooked with strawberries. The two complement each other so well and take strawberry syrup to the next level.

- Medium saucepan
- Medium bowl
Ingredients
- 1 cup strawberries
- 3 tablespoons Pinot Noir wine
- 1/2 cup superfine sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon fresh lemon juice
Instructions
- Prep: Wash and quarter enough strawberries to make 1 cup.
- Cook: In a saucepan, combine 1 cup strawberries, 3 tablespoons Pinot Noir wine, 1/2 cup superfine sugar and 1 teaspoon pure vanilla extract Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes. You’ll notice the syrup starting to form while still retaining some strawberry chunks. Remove from heat and pour into a separate bowl and 1 tablespoon fresh lemon juice, stir until fully combined.
- Chill: Refrigerate the syrup for at least an hour. Once it reaches room temperature or cooler, it’s ready to enhance any dessert of your choice. This syrup is especially delightful on pavlovas but also pairs wonderfully with cakes, pies, and even vanilla ice cream!
Notes
While this recipe calls for Pinot Noir wine, you can easily substitute with your favorite red wine and still get a lovely, flavorful strawberry syrup. I’d love to hear which flavors you’ve tried and how it turned out. Enjoy!
