You’ve heard of Muddy Buddies, a.k.a. Puppy Chow, but have you heard of Popcorn Muddy Buddies? Made with popcorn, this is such a fun twist on the classic chocolate and peanut butter snack. Simple pantry-friendly ingredients, easy recipe, ready in minutes. This is what your friends will keep reaching for when they come over.
Equipment
- 1 large mixing bowl
- 1 heatproof bowl
- 1 large storage container with a lid
Ingredients
- 1 bag microwave popcorn (standard size)
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter (crunchy or creamy)
- 3 tablespoons coconut oil
- 1 teaspoon pure vanilla extract (optional)
- 2 cups powdered sugar
Instructions
- Prep the Popcorn: Cook the bag of microwave popcorn as directed on the package. Once popped, sift out as many unpopped kernels as possible. Pour the popcorn into a large storage container. Give it a few shakes to release the steam and set aside.
- Melt the Chocolate Mixture: In a heatproof bowl, combine 1 cup semisweet chocolate chips, 1/2 cup peanut butter, and 3 tablespoons coconut oil. Melt the mixture using either a double boiler for a smooth and easy process or the microwave for convenience.Double Boiler Method: Fill a sauce pan about half way with water. Place the bowl with the ingredients on top of the sauce pan, make sure the water does not touch the bottom of the bowl. Heat the mixture over simmering water, stirring constantly until smooth. Be sure to use a hot pad, the bowl will be hot!Microwave Method: Heat the mixture in 30-second intervals, stirring after each round to prevent burning.Once fully melted and smooth, stir in 1 teaspoon pure vanilla extract(if using).
- Coat the Popcorn: Pour the melted chocolate and peanut butter mixture over the popcorn in the storage container. Gently stir to distribute the chocolate. Then, place the lid on the container and gently shake it until all the popcorn is fully coated. Be careful not to shake too hard—you don’t want to break the popcorn!
- Coat with Powdered Sugar: Add half of the powdered sugar (1 cup) to the container. Replace the lid and gently shake again. Add the remaining powdered sugar and repeat the process until the popcorn is evenly coated.
- Enjoy: Once coated with powdered sugar, your Popcorn Muddy Buddies are ready to be devoured! Grab a handful and treat yourself to the sweet & salty chocolatey delight that is sure to satisfy your cravings.
Notes
For the best texture, it can help to give freshly made popcorn time to release its steam. Once you transfer the popcorn to an open container, give it a few shakes to help release the steam and then set it aside until you’re ready to pour the chocolate on top. Enjoy!
