Equipment

  • 2 Medium-sized bowls
  • Electric Mixer
  • deep 9×9 baking cake pan

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • 2 tbsp heavy cream
  • 1/2 cup brown sugar
  • 1 cup ripe mashed bananas, about 2 bananas
  • 1 tbsp pure vanilla extract
  • 2 eggs (room temperature)
  • 15 Reese's Peanut Butter Cups roughly chopped
  • 1 cup semisweet chocolate chips

Instructions

  • Prep: Preheat your oven to 350F. Line a 9×9 baking pan with parchment paper and lightly brush with softened butter for easy removal of the snack cake.
  • Whisk together: In a medium bowl, whisk together 1 1/2 cups flour, 1 tsp baking soda, 1 tsp baking powder, and 1/2 tsp salt for about a minute until well combined. Set aside.
  • Mix: In a separate bowl, add 1/2 cup olive oil, 1/2 cup brown sugar, 1 cup ripe mashed bananas, 2 tbsp heavy cream and 1 tbsp pure vanilla extract thoroughly mix until the sugar is fully incorporated. Add the 2 eggs, whisk together until fully combined.
  • Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in: Gently fold in the roughly chopped Reese's Peanut Butter Cups and 1 cup semisweet chocolate chips until evenly distributed throughout the batter. Tip: toss your chocolate chips in a little bit of flour to help prevent them sinking to the bottom of the pan.
  • Bake: Pour the batter into the prepared 9×9 pan and spread it out evenly. Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out mostly clean with a crumb or two attached. The top should be golden brown.
