Maple Pecan Apple Pie

Ingredients
  

  • prebaked 9" pecan pie crust shell

For the Filling

  • 2 large Granny Smith apples sliced 1/8 thick
  • 2 medium red/yellow apples Any type, sliced 1/8 thick
  • 1/2 cup butter
  • 3 tablespoons flour
  • 1 cup maple sugar
  • 1/4 cup water
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon

For The Topping

  • 1/3 cup butter
  • 1/2 cup brown sugar
  • Pinch of salt
  • 2 tablespoons maple syrup
  • 1/2 cup oats
  • 1.5 cups pecans

Instructions
 

For the Filling

  • Prep: Preheat your oven to 300°F. Wash and cut 2 large Granny Smith apples and 2 medium red/yellow apples into 1/8 inch slices. Place in a bowl with cold water and a bit of lemon juice to prevent browning, make sure the water covers all the slices.
  • Melt: In a saucepan over medium heat, melt 1/2 cup butter.
  • Cook: Once the butter is melted, stir in 3 tablespoons flour, 1 cup maple sugar, 1/4 cup water, 1 tablespoon pure vanilla extract and 1 teaspoon ground cinnamon. Stir until fully combined. Continue cooking and stirring until the mixture thickens, about 3-4 minutes, then remove from heat and set aside.

For the Topping

  • Melt: In another saucepan over medium heat, melt 1/3 cup butter.
  • Cook: Stir in 1/2 cup brown sugar, Pinch of salt, and 2 tablespoons maple syrup. Stir until the mixture is smooth. Remove from heat. Add 1/2 cup oats and 1.5 cups pecansStir well and set aside.

Assembling the Pie

  • Layer: Place the prebaked 9" pecan pie crust shell on a baking sheet. Evenly distribute half of the apple slices in the pecan pie shell. Pour half of the prepared filling over the sliced apples, spreading it evenly. Add the remaining apple slices on top, followed by the rest of the filling.
  • Add topping: Carefully spoon the topping mixture over the filling, ensuring even distribution.
  • Bake: Place the pie on the baking sheet in the preheated oven. After 10 minutes of baking, cover the pie with aluminum foil so the topping doesn’t burn. Bake for about an hour until the topping is golden brown and the filling is bubbling. Check the apples for softness with a fork; if they're still firm, continue baking for an additional 10 minutes.
  • Cool and enjoy!: Once the apples are cooked through and the top is golden brown, remove from the oven and allow the pie to cool slightly before serving. Top with whipped cream, vanilla ice cream or enjoy all on its own!
