Crepe Cake with Whipped Cream Frosting


This gorgeous crepe cake may look complicated, but it’s much easier to make than you’d think. Plus, it’s one of the most delicious cakes! The flavor of the crepes is made richer with brown butter. Crepe Cake with Whipped Cream Frosting Recipe

This gorgeous crepe cake may look complicated, but it's much easier to make than you'd think. Plus, it's one of the most delicious cakes! The flavor of the crepes is made richer with brown butter. The whipped cream frosting has cream cheese & vanilla in it for the perfect flavor and texture. I’m OBSESSED.

Ingredients
  

For the crepe batter:

  • 1/2 cup butter
  • 2 2/3 cups milk
  • 2 eggs
  • 1 tbsp pure vanilla extract
  • 2 cups pancake mix

For the whipped cream frosting:

  • 4 cups heavy whipping cream
  • 1/2 cup cream cheese (give this about seven seconds in the microwave to soften up a bit)
  • 1/2 cup + 2 tablespoons sugar
  • 2 tablespoons pure vanilla extract
  • 2 teaspoons vanilla pudding powder

Instructions
 

For the crepe batter:

  • Brown the butter in a small saucepan on medium heat. Keep stirring so the butter can brown evenly. This may take 10-15 minutes depending on how hot your stove is. Remove from heat and set aside.
  • In a bowl, whisk together the brown butter, cold milk, and vanilla extract. Add the eggs and whisk until combined. Whisk in the pancake mix.
  • Warm a pan (or two if you want to save time and feel comfortable multitasking) over medium-low heat. Spray with cooking oil. Then pour three tablespoons of the crepe batter at once into the center of the pan. As you’re pouring, carefully begin the swirl the pan around lightly. The goal is to get the batter to spread evenly and form a circle before sticking to the pan. Once the crepe has brown spots on the bottom, it’s ready. No need to flip unless the top is still shiny (but it shouldn’t be if your heat is low enough).
  • Store the crepes in the fridge so they can cool down before you assemble the cake.

For the whipped cream frosting:

  • Whisk all of the ingredients using an electric mixer until stiff peaks are formed.

Assemble the crepe cake

  • Assembling a crepe cake is super easy! Lay a crepe on the flat surface on which you’d like to serve it. Use a 2" cookie scoop to transfer one scoop of whipped cream frosting onto the crepe. Spread into an even layer. Add another crepe on top and repeat. Top with fruit if you’d like. Enjoy!!

Notes

Crepe cakes are surprisingly easy to make! Here are ways you can save time when making crepe cakes:
1. If you feel comfortable multi-tasking safely, cook the crepes using two pans at once and you’ll be done twice as fast!
2. The crepe batter is made to save time by using pancake mix as the base. We then elevate it by using brown butter, milk, and eggs.
3. The whipped cream frosting is quick to make because you can mix all of the ingredients together at once.
