With all of our favorite bonfire ingredients, these S’mores Chex Krispies Treats are incredibly delicious, quick, and easy to make. I love the added graham crackers in here – there’s something so nostalgic about them.

S’mores Chex Krispies Treats Recipe (Half-Batch)

If you're a fan of classic bonfire treats, you'll love these half-batch S'mores Chex Krispies Treats. They taste like the start of summer break and combine all our favorite s'mores ingredients—marshmallows, graham crackers, and chocolate—with the added crunch of Rice Chex cereal. They are so quick and easy to make and I love that it’s a half-batch recipe, a perfect size for a family so I don’t have to figure out how to consume a giant 9×13! These will be on repeat in our kitchen this summer.

Equipment

  • 9×9 pan
  • Parchment paper
  • Medium, deep saucepan

Ingredients
  

  • 1/3 cup butter
  • 10 ounces mini marshmallows (you can buy a bag of marshmallow in this size to make it easy to measure)
  • 2 1/2 cups Rice Chex Cereal
  • 1 1/2 Graham Crackers (roughly cut into small 1" squares)
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Prep: Line a 9×9 pan with parchment paper and grease with butter. Add 2 1/2 cups Rice Chex Cereal along with 1 1/2 Graham Crackers (roughly chopped) to a bowl and set aside. Measure out 1 cup semi-sweet chocolate chips and set aside.
  • Melt: In a medium, deep saucepan, melt 1/3 cup butter and 10 ounces mini marshmallows, on low heat until just melted. Be patient and careful to avoid overcooking, which may result in a tough texture. Remove from heat when just a few small lumps remain.
  • Combine: Add the Rice Chex Cereal and Graham Crackers to the melted marshmallow mixture and mix gently but thoroughly to ensure the ingredients are well coated.
  • Incorporate: While the mixture is still warm add 1 cup semi-sweet chocolate chips and gently mix once again. You will have to work quickly to make sure all is mixed before the mixture cools down.
  • Press into pan: Transfer the mixture to the prepared 9×9 pan and gently spread into an even layer. You can add a few more chocolate chips for extra fun if you'd like!
  • Cool & Serve: Allow the treats to cool to room temperature, giving them a few minutes to set. Once cooled, cut them into squares, dig in and enjoy!
