Cinnamon Banana Cake Recipe with Cream Cheese Frosting

This Cinnamon Banana Cake with Cream Cheese Frosting is tender and moist with swirls of sweet cinnamon filling and topped with a delicious cream cheese frosting. Because we bake this in a square pan, it bakes in about half the time as traditional banana bread.

Ingredients
  

Banana Cake

  • 1/2 cup olive oil
  • 1/2 cup brown sugar
  • 2 ripe bananas mashed (should measure a little less than 1 cup)
  • 1 tbsp pure vanilla extract
  • 2 eggs at room temperature
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Cinnamon Filling

  • 1/4 cup softened or melted butter
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Cream Cheese Frosting

  • 1/4 cup cream cheese softened
  • 1/2 cup butter softened
  • 1 1/2 cups powdered sugar
  • 2 tsp vanilla extract
  • 1 tbsp ground cinnamon

Instructions
 

Cinnamon Banana Cake

  • Prep: Preheat your oven to 350°F (175°C). Lightly grease your 8×8-inch square cake pan and line with parchment paper. Mash 2 ripe bananas (enough to make a little less than 1 cup mashed) and set aside.
  • Mix Wet Ingredients: In a large mixing bowl, add 1/2 cup olive oil, 1/2 cup brown sugar and 1 tbsp pure vanilla extract and stir until combined. Add the mashed bananas and stir again. Add 2 eggs, whisking until smooth and fully incorporated.
  • Mix Dry Ingredients: In a separate bowl, whisk together 1.5 cups all-purpose flour, 1 tsp baking soda, 1 tsp baking powder and 1/2 tsp salt for about a minute to ensure everything is evenly distributed.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stir together until just combined.
  • Prepare the Cinnamon Filling: In a small bowl, mix together 1/4 cup softened or melted butter, 1/2 cup brown sugar, 1 tsp ground cinnamon, 1 tsp vanilla extract until a paste-like mixture of our cinnamon filling forms.
  • Assemble: Pour the batter into the prepared baking pan. Use a spoon to place several dollops of the cinnamon filling on the cake batter and use a toothpick or knife to swirl it into the batter.
  • Bake: Place the pan in the preheated oven and Bake for about 30 minutes, or until a toothpick inserted into the center comes out with just a few small crumbs attached. Allow the cake to cool in the pan.

Cream Cheese Frosting

  • Cream together: While the cake bakes, prepare the frosting. In a medium bowl, add 1/4 cup cream cheese and 1/2 cup butter(both softened), and cream together with an electric hand mixer or whisk until smooth. Gradually add 1 1/2 cups powdered sugar and 2 tsp vanilla extract mixing until the frosting is creamy and smooth.
  • Frost and Serve: Once the banana cake has cooled to room temperature, spread the cream cheese frosting evenly over the top. Finish by sprinkling the ground cinnamon over the frosted cake.

Notes

If you want to soften the cream cheese quickly, you can do so in the microwave. Test it at about 5-7 seconds, as cream cheese softens very quickly when heated.
