If you're looking for a quick, indulgent treat that everyone will love, these Chocolate Rice Krispies Treats are the answer. With the addition of chocolate chips, these bars are ooey gooey, chocolatey, and absolutely addictive. At my house, we couldn't get enough of them! These treats come together in no time and are perfect for any occasion.

Equipment

  • 9×9 pan
  • Parchment paper
  • Large, deep saucepan
  • Non-stick spatula

Ingredients
  

  • 1/3 cup butter
  • 10 ounces mini marshmallows, you can buy a bag of marshmallow in this size to make it easy to measure
  • 1 tsp pure vanilla extract (optional)
  • 4 cups Rice Krispies Cereal
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup mini marshmallow sprinkles, optional

Instructions
 

  • Prep: Line a 9×9 pan with parchment paper and grease with butter. Prepare 4 cups of Rice Krispies cereal and 1 cup of semisweet chocolate chips and set aside.
  • Melt: In a large, deep saucepan, melt 1/3 cup butter and 10 ounces mini marshmallows, on low heat until just melted. Be patient and careful to avoid overcooking, which may result in a tough texture. Remove from heat and stir in 1 tsp pure vanilla extract.
  • Combine: Add the 4 cups Rice Krispies Cereal to the melted marshmallow mixture and mix gently but thoroughly to ensure the cereal is well coated.
  • Incorporate: While the mixture is still warm add 1 cup semi-sweet chocolate chips and gently mix once again. You will have to work quickly to make sure all is mixed before the mixture cools down.
  • Press into pan: Transfer the mixture to the prepared 9×9 pan and gently spread into an even layer. You can add a few mini marshmallow sprinkles on top or a few more chocolate chips for extra fun if you'd like!
  • Cool & Serve: Allow the treats to cool to room temperature, giving them a few minutes to set. Once cooled, cut them into squares, dig in and enjoy!
