Total Time 15 minutes

Equipment

  • 1 large mixing bowl
  • 1 Heat proof bowl
  • 1 gallon size zip-lock bag

Ingredients

  • 9 cups Rice Chex
  • 2 cups semisweet chocolate chips
  • 1 cup crunchy peanut butter Creamy peanut butter works as well.
  • 1/2 cup butter
  • 2 tsp pure vanilla extract optional
  • 3 cups powdered sugar

Instructions

  • Prep: Measure 9 cups Rice Chex into a large bowl and set aside.
  • Melt: In a separate heat-proof bowl, add 2 cups semisweet chocolate chips, 1 cup crunchy peanut butter, 1/2 cup butter and melt together. You can either use a double boiler for a smooth and easy melting process or opt for the microwave method for convenience. If using the microwave, start with 1 minute and then 30 second increments, stirring between each set until fully melted. Whichever method you choose, ensure that the mixture is completely melted and smooth. If you are including 2 tsp pure vanilla extract, stir it in now.
  • Coat the cereal: Pour the melted chocolate and peanut butter mixture over the cereal in the large bowl. Gently mix until all the cereal is fully coated, ensuring every piece is evenly covered.
  • Coat with Powdered Sugar: Pour half of the 3 cups powdered sugar into a clean bag or a bowl. Add in the chocolate-coated cereal, followed by the remaining powdered sugar on top. Seal the bag and shake it all together or mix gently but thoroughly in a bowl until it’s relatively well-distributed. But don’t shake tooooo hard because then you won’t get those extra chunky ones everyone’s always fighting over.
  • Enjoy: Once coated with powdered sugar, your Homemade Muddy Buddies are ready to be devoured! Grab a handful and treat yourself to the double chocolatey delight that is sure to satisfy your cravings.
